Usage Note

Viande refers specifically to animal flesh eaten as food. In old French it simply meant 'food' (from Latin vivenda), but the meaning narrowed over centuries. La viande rouge (red meat) and la viande blanche (white meat, e.g. chicken) are common culinary distinctions. Viande never refers to fish, which is le poisson.
