Usage Note

Gruyère is a firm Swiss cheese with a nutty flavour, often used in French cooking in quiche, croque-monsieur, and fondue. In France the term is sometimes used loosely for any hard Swiss-style cheese. Swiss Gruyère AOP, unlike Emmental, has no large holes.
