Maïs is always masculine and the final 's' is pronounced (unlike most French final consonants) because the trema on 'ï' signals that the 'i' is a separate syllable. Épi de maïs means 'corn on the cob'; maïs soufflé is 'popcorn'. In French-Canadian usage, blé d'Inde is more common for corn.
